Kesar Da Dhaba (since 1916) and Bharawan Da Dhaba — two legends of Punjabi food. Dal makhani slow-cooked overnight, Amritsari kulcha with chole, sarson ka saag. Queue is the review.

Zhilmil Dhaba, Karnal (NH44) — tandoori roti, dal tadka, kadai paneer on charpais. Old-school rustic charm with legendary chai. The Delhi-Chandigarh midpoint refuel.

Puran Singh Ka Mashoor Vishal Dhaba, Ambala Cantt (NH44) — since the Partition era. Mutton curry, chicken curry, keema kaleji. Then: Pal Dhaba for butter-everything Punjabi. The original non-veg highway legends.

Cheetal Grand, Khatauli (NH58 Delhi-Dehradun) — 105km from Delhi. Looks like a restaurant, tastes like home. Paranthas, dal, gobi sabzi, and their famous tubular omelette.
