    सिग्नेचरKumaoni thali

Order the veg thali plus a side of pahadi chicken — the thali is the kitchen's pride, the chicken is what they cook for themselves. Skip the Chinese section, it's only there because tour groups demand it.

    सिग्नेचरbal mithai

Skip the chocolate bal mithai (it's a recent invention for tourists) — order the plain bal mithai by weight and ask for it in a leaf-pack rather than the cardboard box; it travels three days without going stale.
