Paranthe Wali Gali: 150-year-old lane dedicated to stuffed parathas. Pt. Gaya Prasad (since 1872) — parathas fried in desi ghee, stuffed with everything from potato to rabri. Rs 80-120.

Karim's near Jama Masjid (since 1913): Descendants of Mughal court cooks. Mutton burra kebab — marinated 8 hours, charcoal-grilled. The single best kebab in Delhi. Rs 350.

Natraj Dahi Bhalla at Chandni Chowk: 40-person queue. Join it. Texture no other shop replicates. Rs 80.

The Walk South

Old Famous Jalebi Wala at Dariba Kalan (since 1884): Jalebis in desi ghee, served hot. Rs 40. Best before 10 AM.

Connaught Place

Wenger's for pastries (since 1926). Kerala House canteen for Rs 100 thali. Saravana Bhavan for reliable South Indian.
