Lucknow's food was shaped by Nawabs who considered eating an art form. Galouti kebab — so soft it was designed for a toothless king.
The Essential Three
Tunday Kababi (Aminabad, since 1905): Galouti kebab on roomali roti. Meat dissolves on your tongue. Rs 180 for 4 pieces. Old Gate branch is the real one.
Wahid's Biryani (Aminabad): Lucknowi biryani — lighter than Hyderabadi, more fragrant, less oily. Rs 200. The mutton version.
Raheem's (Chowk, since 1890): Nihari — slow-cooked stew designed for dawn eating after fasting. Rich, intense, marrow melting into gravy. Rs 220. Go before 8 AM.
