# Varanasi Ghat Food

Varanasi — a city where you eat between temples, overlooking cremation fires. The food is extraordinary. The hygiene requires judgment.

Morning

Ram Bhandar at Thatheri Bazaar: Kachori-sabzi — crispy fried bread with potato curry. Rs 40. Every Banarasi has an opinion on the best shop. This is the consensus.

Blue Lassi (Kachouri Gali): Most famous lassi in India. Thick, clay cups, saffron-pistachio version. Rs 80. 15-minute wait. Tiny shop — eat standing in the lane.

Ghat Trail

Kashi Chat Bhandar at Dashashwamedh: Tamatar chaat — unique to Varanasi, tomato-based, sweet-sour, unlike any chaat elsewhere. Rs 50.

Banarasi Paan

Sweet meetha paan — betel leaf with coconut, gulkand, fennel, silver leaf. Rs 30-50 at any paan stall near the ghats. Not tobacco gutka — the sweet version.

What to Skip

Floating restaurants and rooftop dining near Manikarnika Ghat. Overpriced, mediocre, guilt-trip pricing. Eat at street stalls with visible queues.

Food Safety

Varanasi street food is riskier than Delhi or Amritsar — water quality is a concern. Stick to fried items, avoid raw salads and ice. Carry ORS sachets.
