There is an honest luxury to being in a 560-year-old fort during Indian summer: thick stone walls, high ceilings, a cold pool waiting outside, and nowhere you need to be. The drive from Delhi should include a stop at the highway dhabas for chole bhature or dal makhani—NH48 has some of North India's best roadside food.
